Siltepec is a Municipality in the region of Chiapas, Mexico. Chiapas shares a border with Guatemala who also produces coffee. Chiapas is 1,400m above sea level and sits along the Sierra Madres Mountain range which provides a great location to grow their beans.
Harvest season is from September to December.
Once the beans are picked and pulped, they are fully washed and sun-dried on the patios.
It is classified as Strictly High Grown (SHG) bean which refers to beans grown at an alitude higher than 1,300 meters above sea level. SHG beans are known to grow and mature slowly, harder and denser than beans grown at lower elevation. This gives the beans a more desirable taste profile and they are generally more expensive.
A very versatile coffee that can be enjoyed through a variety of methods. Great on its own or with milk.
