The Roaster's Note on Freshness:

Specialty coffee needs time to settle. To experience our coffees at their absolute best, we highly recommend allowing your beans to rest before brewing—7 days for filter methods and 10 days for espresso. This patience rewards you with an incredibly clean, vibrant, and fully developed cup.
